Watermelon Taboule Stacks with Grilled Chicken

  • 8 3-inch by 5 inch thin slices of seedless watermelon
  • 14 ounces prepared taboule
  • 3 or 4 grilled skinless chicken breasts, chilled and sliced
  • Minced fresh chives and parsley for garnish


Place a watermelon slice on each of 4 plates. Spoon half of the taboule over the 4 watermelon slices in as even a layer as possible. Place another slice of watermelon over the taboule. Spoon the remaining taboule over the top slices of watermelon. Arrange the chicken slices over the taboule.  Dust the chicken slices with chives and parsley. Serve immediately. Serves 4.

Breakfast Lasagna

  • 4 cups corn flakes
  • 2 cups minced watermelon
  • 2 cups fresh blueberries or sliced strawberries
  • 2 cups vanilla yogurt


Place 1/3 of the corn flakes in an even layer in the bottom of an 8 X 8 serving dish. Mix together the watermelon, blueberries and yogurt and spoon half of it over the corn flake layer evenly. Sprinkle another layer of the corn flakes over the yogurt and then layer the remaining yogurt over that. Sprinkle the remaining corn flakes evenly over the top.

Back again and I know it has been a minute for Watermelon And Chicken Weds but I got some fly recipes for y’all Fang, FANGGG!!!! In the words of MC Hammer… Let’s get it started.

Grilled Watermelon Salad

(I did not know people would grill Watermelon)


  • 1/2 (5-pound) seedless watermelon
  • 1/4 cup balsamic vinegar
  • Extra-virgin olive oil
  • Kosher salt (specialty salt is great here, if on hand)
  • 2 cups fresh baby arugula, washed and dried
  • 1 cup goat cheese, crumbled, preferably a French Chevre
  • Fresh finely cracked black pepper


Stand the watermelon half cut side down on a cutting board and slice away the rind, leaving a solid block of melon. Turn the block on its side and cut it into 8 squares, roughly 3 by 3 inches and 1-inch thick.

Pour the vinegar into a small saucepan and bring to a simmer over medium-high heat. Cook until reduced to a thick syrup consistency. Set aside.

Heat a nonstick grill pan over medium-high heat. Drizzle just enough olive oil over watermelon slices to thinly coat and place on hot grill pan. Grill each side about 2 minutes until grill marks appear; transfer to a plate and season with salt.

To assemble the salads, put about 1/4 cup of baby arugula on a serving plate, followed by a grilled slice of watermelon in the center, and top with a tablespoon of crumbled cheese and another 1/4 cup arugula. Add another watermelon slice and another tablespoon of cheese. Repeat with remaining ingredients. Finish each salad with a very light drizzle of olive oil and balsamic syrup. Dust with black pepper and serve immediately.

I mean, is the dude carrying K-Ci at his finest moment really getting paid enough. The price of fame. Smh
